Minestrone Soup

3 cups vegetable broth

1 cup shredded cabbage

1 cup diced potatoes

1/2 cup tomato sauce or stewed tomatoes

1 celery stalk, diced

1 carrots, diced

1/2 cup uncooked macaroni (small shells)

1/2 cup onion, chopped

1 tablespoon Braggs aminos or low sodium soy sauce

1 tablespoon parsley

1/2 teaspoon Italian seasoning

1/4 teaspoon each marjoram and crushed rosemary

1/2 cup frozen  spinach or other greens

3/4 cup cooked kidney beans

1/2 cup frozen peas


  • Combine the first 8 ingredients in a large pot

  • Bring to a boil, reduce heat and simmer for 35 minutes

  • Add the rest of the ingredients and simmer for 15 minutes longer
