1 cup cooked brown rice
1 cup black beans
½ cup chopped onions, dry sautéed
¼ cup diced tomato
¼ cup shredded carrots
1 cup cooked mashed sweet potato
1 tbsp cilantro
1 – 3 tsp chili powder (3 tsp is very hot)
1 tsp ground cumin
3 tbsp nutritional yeast
2 tsp minced garlic
1 tsp Tabasco or other hot sauce (opt)
Preheat oven to 400 degrees. Prepare a cookie sheet with parchment paper. Combine all ingredients in a large bowl and stir thoroughly. Form into ½ cup patties and bake, turning once halfway through baking, until slightly crisp, about 25 – 30 minutes.
These patties are very tasty and can be spicy. If you use three teaspoons of chili powder and one teaspoon of Tabasco you will have that spicy meal. I tone these down for guests with just one teaspoon of chili powder and one teaspoon of Tabasco.
