Soft Carob Chip Cookies

1 ¼ cups water

1 cup clean, raw walnuts

¾ cup pitted dates

2 teaspoons vanilla

½ teaspoon salt

1 ¼ cup brown rice flour

½ cup non dairy carob chips

½ cup walnut pieces


Process the walnuts and water in a blender until smooth; add the dates, vanilla and salt and continue blending. Pour into a mixing bowl and mix in the brown rice flour. Add the carob chips and walnut pieces. Mix well. Drop by spoonful onto a non stick cookie sheet and bake at 350 degrees for 20-25 minutes.


These cookies are soft and have a great flavor. They are very satisfying and sweet; you won’t want too many.
