1 medium onion, sliced
3-4 cups vegetable broth or water
3 cups diced potatoes
1 1/2 cups corn kernel
1 cup fresh or canned tomatoes
1 cup rice milk
1 tablespoon agave nectar or honey (opt)
1 tablespoon Bragg aminos
2 tablespoons vegetable seasoning
2 tablespoons nutritional yeast (opt)
Sauté or steam the onions in a small amount of water for about 5 minutes. Add half of the liquid and bring to a boil. Add the potatoes,corn and tomatoes; cook until tender. Slowly add the rice milk, agave or honey, Bragg aminos, vegetable seasoning and nutritional yeast, if using.
This is also good with the addition of a mild salsa or some tabasco if you prefer. There are several vegetable seasonings that you can use from Spike to Vegit to Mrs Dash or any other no salt seasoning you may find.
