1 12 oz. bag of cranberries
1 cup water
1/2 cup celery, chopped
1/4—1/3 cup agave nectar
1/2 cup small orange pieces and/or pineapple pieces
Boil the cranberries in the water until they “pop”. Add the celery, turn down the heat and cook for 5 minutes. Add the agave nectar and fruit pieces. Mix well.
1/2 cup oatmeal
2 tablespoons cornmeal
2 tablespoons maple syrup
1 teaspoon vanilla
Combine the ingredients and toast in a 400 degree oven for 3—4 minutes or until lightly toasted.
Layer individual dessert cups with cranberries, topping, cranberries and finish with the topping.
The filling is the recipe for Cranberry Relish. The sweetness of the topping makes this a great desert.
