Eggs are a food that many people enjoy; they are used in a lot of recipes. You probably also know that they are a rich source of cholesterol (a developing chicken embryo needs that – we don’t). Cholesterol is one of those substances that we must have but our liver can produce all we need so we don’t really have to eat any.
Eating a moderate amount of eggs may not raise our cholesterol levels significantly but a study at the Rambam Medical Center in Israel showed that consuming two eggs a day for three weeks promotes the process of arteriosclerosis (blood vessel walls thicken and blood flow is diminished – not good). The good news is that eating fruits and vegetables can interfere with that degenerative process. So… go eat a salad or an appleand slow down that process.J
