4 cups butternut squash, peeled and chopped
1 can (14.5 oz) salt free diced tomatoes
1/3 cup onion, chopped
1/3 cup celery, chopped
1/2 teaspoon dried parsley
1/2 teaspoon Italian seasoning
1/2 teaspoon dried basil
Dry sauté the chopped onion in a large skillet. Add the remaining ingredients, cover and simmer for 25 minutes. It is ready when the squash is soft (this will depend on the size of your cubes.
