Pumpkin Pudding

1 15 ounce package firm tofu

1 16 ounce can of solid pack pumpkin

1/3 cup raw honey

1 teaspoon vanilla

1 teaspoon ground cinnamon

1 teaspoon pumpkin pie spice

1/2 teaspoon ground ginger

1/4 teaspoon ground cloves



Preheat oven to 350 degrees.

Combine all ingredients in a food processor and process until very smooth. Pour into a baking dish and bake for 1 hour (until firm). Cool (or chill) before serving.

This recipe is quick to put together, is very tasty and is excellent the next day, if it lasts.
