Deep Dish Apple “Pie”

6-7 Granny Smith apples

3/4 cup unsweetened applesauce

2-3 T raw honey

2 T lemon juice

1/8—1/4 tsp nutmeg

2 tsp cinnamon

3 T flour

1/2 cup rolled oats

2 Tbsp cornmeal

2 Tbsp pure maple syrup

1 tsp vanilla

Preheat oven to 375.

Peel and slice apples and place them in a bowl. Combine the applesauce, honey, lemon juice, cinnamon and nutmeg in another bowl. Spoon over the apples and mix gently. Sprinkle flour on the top and mix again. Place in a glass baking dish. Bake for 30 minutes.

Place the oats and cornmeal in a bowl. Combine the maple syrup and vanilla and pour over the oat mixture. Mix well. (This can be doubled, if desired).

Remove the “pie” from the oven and reduce heat to 350. Crumble the oat mixture over the filling and return to oven. Bake for 15 minutes. Let rest for 15 minutes before serving. Excellent served warm or cold.
