3 cups whole grain bread flour
1 teaspoon active yeast
1 teaspoon salt
1 ½ cups hot (not boiling) water (125-130 degrees)
Extra flour, if necessary

Combine flour, yeast and salt

Stir in water until well combined

Cover with plastic wrap, let stand for 3 hours at room temperature (dough will become puffy)

Transfer to a well-floured surface and fold over 10-12 times using a scraper

Place in a parchment lined bowl, cover with a towel, let stand for 35 minutes

Place a Dutch oven with its lid in an oven and preheat to 450 degrees

When oven reaches 450 degrees, lift the parchment paper along with the dough out of the bowl and into the Dutch oven

Cover and bake for 30 minutes

Uncover and bake for an additional 5-10 minutes
