3 cups whole grain bread flour

1 teaspoon active yeast

1 teaspoon salt

1 ½ cups hot (not boiling) water (125-130 degrees)

Extra flour, if necessary


  • Combine flour, yeast and salt

  • Stir in water until well combined

  • Cover with plastic wrap, let stand for 3 hours at room temperature (dough will become puffy)

  • Transfer to a well-floured surface and fold over 10-12 times using a scraper

  • Place in a parchment lined bowl, cover with a towel, let stand for 35 minutes

  • Place a Dutch oven with its lid in an oven and preheat to 450 degrees

  • When oven reaches 450 degrees, lift the parchment paper along with the dough out of the bowl and into the Dutch oven

  • Cover and bake for 30 minutes

  • Uncover and bake for an additional 5-10 minutes
