1 can (15 ounces) chickpeas (2 cups cooked)

2 ½ tablespoons fresh lemon juice

1 teaspoon or less tahini (sesame paste)

1/4 cup chopped yellow onion

1 –2 teaspoons chopped garlic

2 teaspoons ground cumin

1/8 teaspoon ground red pepper

1/4 teaspoon salt

  • Drain and rinse the chickpeas, reserving the liquid.

  • Combine the chickpeas, lemon juice, tahini, onion, garlic, cumin, pepper and salt in a food processor.

  • Puree until smooth, adding some chickpea liquid  (aquafaba) if needed to thin the puree.

  • Refrigerate for 3-4 hours before serving to blend the flavors.

This is a very easy recipe and tastes great every time. Once you taste it you will make it again and again. Try a cracker with hummus and a little salsa on the top; you will enjoy that too.

This is great made with black beans too.
