1 cup unsweetened applesauce
2 tablespoons ground flaxseed + 2 tablespoons water
½ cup raw honey
1 teaspoon vanilla extract
1 tablespoon Ener-G egg replacer
1 ½ cups whole wheat flour
1 teaspoon cinnamon
¼ teaspoon nutmeg
1 teaspoon sea salt
1 teaspoon baking soda
3 cups rolled oats
1 cup raisins
Preheat the oven to 375 degrees.
In a large bowl combine applesauce, flaxseed, honey, vanilla.
In a smaller bowl combine the egg replacer, flour, spices, salt and baking soda.
Gradually mix the dry and wet ingredients until thoroughly combined. Stir in the raisins, then the oats. Use your hand to mix, if necessary.
Place a round tablespoon of dough* on a non-stick cookie sheet (or use a silicone pad).
Bake for 10 minutes.
* Fill a round tablespoon with dough and pull it out with a knife on to the cookie sheet. This is a nice size cookie and your cookies will be uniform in size.
