½ cup barley
3 – 4 cups vegetable broth
1 red onion, chopped
2 stalks celery, sliced thin
2 carrots, sliced thin
3 – 4 tablespoons vegetable seasoning (Mrs Dash Original)
2 15 oz. cans cannelloni beans (3 cups cooked)
1 box Pomi chopped tomatoes (3-4 tomatoes, chopped)
Combine the barley, vegetable broth, onion, celery, carrot and seasonings in a soup pot. Simmer until the barley is tender, about 25 minutes.
Add the remaining ingredients and simmer for an additional 20 minutes.
Serve with Cornbread Squares or whole grain bread.
This soup is very easy to make. Other vegetable seasonings can be used to suit your tastes. There are various choices such as Spike, Vegit, other Mrs Dash seasonings and many all purpose seasonings.
