½ cup whole wheat pastry flour

1/3 cup unsweetened cocoa

½ teaspoon baking powder

½ teaspoon baking soda

1/8 teaspoon salt

Dash of cinnamon

½ cup mashed black beans

½ cup unsweetened applesauce

½ cup Sucanat

½ teaspoon vanilla

1 tablespoon Egg Replacer

¼ cup water


  • Combine first six ingredients (dry ingredients).

  • Combine the next four ingredients (wet ingredients) in a personal blender.

  • Mix the Egg Replacer and water. Let it sit to get frothy.

  • Mix the Egg Replacer and wet ingredients. Add the dry ingredients and mix to combine just enough to blend.

  • Pour into a non stick square pan and bake at 350 degrees for 30 minutes.
