1 tablespoon Ener-G egg replacer
2 tablespoons water
2 tablespoons ground flaxseed (mix with 2 tablespoons water)
1 cup unsweetened applesauce
1/3 – ½ cup raw honey
1 tablespoon vanilla extract
3 cups whole wheat flour
½ teaspoon sea salt
2 teaspoons baking soda
¼ cup carob powder
1 cup raw sunflower seeds
½ cup carob chips (or vegan chocolate chips)

Preheat oven to 350 degrees.

Blend egg replacer and water – set aside until it becomes frothy

In a large bowl combine mix flaxseed with water

Add applesauce, honey and vanilla, blend with a wire whisk

Beat in the mixed egg replacer

In a separate bowl combine flour, sea salt, baking soda, carob powder

Gradually add the dry ingredients to the wet ingredients.

Stir in the sunflower seeds and carob chips

Place rounded tablespoons of dough* on a non-stick cookie sheet or parchment paper covered cookie sheet.

Bake for 10 minutes. Cool on a wire rack.
*Fill a round tablespoon with cookie dough and push out with a knife on to the cookie sheet. This is a nice size cookie and the cookies will be more uniform.
*A small ice cream scoop works well
