Vegetable Rice Casserole

1/2 cup broccoli broken into florets

1/2 cup cauliflower broken into florets

1/2 cup zucchini, diced

1/2 cup sliced onion

1/2 cup sliced celery

1/2 cup sliced mushrooms

2 cups cooked brown rice

1/2 cup shredded carrot

1/2 teaspoon soy sauce

1/2 cup mild salsa

5-10 cherry tomatoes cut in half (opt)

*1/2 cup Melted “Cheese” Sauce (opt)

 

Preheat oven to 350.

 

Steam the broccoli, cauliflower, zucchini, onion and celery about 8 minutes.  Add the mushrooms and steam for 2 more minutes.  Remove from heat and set aside.

 

Mix the rice with the carrots and soy sauce. Spread the mixture evenly in a 1-quart casserole or baking dish.  Spoon the salsa over the rice and top with the steamed vegetables and tomatoes.  Pour the Melted “Cheese” Sauce over it all, if desired.

 

Bake uncovered for 15 to 20 minutes until heated through.

You will enjoy this recipe. It has a lot of vegetables in it and you can use more or fewer to suit your taste. Use whatever salsa you like but I prefer Muir Glen. You will want to make this often.
