Cornbread

In a bowl combine:

 

1 cup cornmeal

1/2 whole wheat flour

1 tbsp onion flakes or powder

2 tsp Rumford (aluminum free) baking powder

 

In a second bowl combine:

 

1 cup hot water

1 – 2 tbsp unfiltered honey

1 tbsp Bragg apple cider vinegar

1/2 tsp Celtic salt

 

Preheat oven to 350 degrees. Mix wet ingredients well until honey is dissolved. Add the dry ingredients and quickly stir to mix well. Do not mix too much. Pour mixed ingredients into a non stick muffin pan. Bake for approximately 20 minutes. Let cool for 5—10 minutes and enjoy.

 

You will enjoy this recipe. It is easy and is has a strong corn flavor. You can vary the honey. One tablespoon of honey is good but once in a while I enjoy a little more sweetness and the extra tablespoon is perfect.
