1 can (15 ounces) chickpeas (2 cups cooked)
2 tablespoons fresh lemon juice
1 tablespoon or less tahini (sesame paste)
1/4 cup chopped yellow onion
1 –2 teaspoons chopped garlic
2 teaspoons ground cumin
1/8 teaspoon ground red pepper
1/4—1/2 teaspoon salt
Drain and rinse the chickpeas, reserving 1/4 cup of the liquid.
Combine the chickpeas, lemon juice, tahini, onion, garlic, oil, cumin, pepper and salt in a blender or food processor. Puree until smooth, adding the chickpea liquid if needed to thin the puree.
Refrigerate for 3-4 hours before serving to blend the flavors. Garnish with parsley, if desired.
This is a very easy recipe and tastes great every time. Once you taste it you will make it again and again. Try a cracker with hummus and a little salsa on the top; you will enjoy that too.
