Preheat the oven to 425 degrees.
Wash the potatoes you need. If you like a crispy skin on your potatoes, pierce them a few times with a fork and simply place them on the oven rack for about one hour (depending on their size). If you like a softer skin wrap the potatoes in parchment and then aluminum foil (you don’t want the aluminum to touch your food). They are done when you can pierce them with a fork easily.
You can do the same thing with sweet potatoes and yams. These do need to be wrapped and because they sometimes drip you might want to put a cookie sheet on the rack beneath them in the oven (to keep your oven clean).
Serve the potatoes with your favorite no oil salad dressing, Melted Sauce, Faux Parmesan, BBQ Sauce, salsa, some seasoning or a combination or these.
Baked potatoes are easy to prepare with no pans to clean and can be served with different vegetables, soups or various side dishes. And as always, start with a salad.
