2 onions diced
1-2 teaspoons minced garlic
2 tablespoons parsley
1 teaspoon thyme
1 bay leaf
2-3 cups tomatoes (peeled and diced) OR 2 cans of diced tomatoes
3 cups vegetable stock
1 teaspoon tamari sauce
1-2 teaspoons honey or agave (opt)
Chopped parsley for garnish
Steam or dry sauté the onions (with vegetable broth) until soft.
Combine the onions, garlic, parsley, thyme, bay leaf, tomatoes and stock in a two-quart saucepan. Simmer over medium heat until the tomatoes (if fresh) are cooked and the flavors are well combined (about 40 minutes).
Season with tamari sauce and honey or agave. Garnish with parsley.
This is an easy soup that improves as it sits. It may even be more flavorful the next day.
