1 onion, coarsely chopped
1 1/2 teaspoons minced garlic
2 cups cooked chickpeas
1 tablespoon tahini
1 tablespoon lemon juice
1 teaspoon ground coriander
1/2 teaspoon ground cumin
1/4 teaspoon unrefined salt
2 tablespoons dried parsley
2 tablespoons flour
Pinch of cayenne
Process the onion in a food processor until finely chopped. Add the other ingredients and process until chopped but not pureed.
Measure a 1/3 cup of the mixture at a time and roll into large balls. Place on cookie sheet covered with parchment paper in a 400 degree oven for 15 minutes; turn the balls over and bake for another 15 minutes.
Falafel can simply be served with a salad or steamed vegetables. This recipe can be made into smaller balls or even patties if you prefer.
