Couscous and Raw Veggies

1 cup shredded carrots

1 cup broccoli florets (small pieces)

1 cup cauliflower (small pieces)

1 cup sweet onions (small pieces)

½ cup zucchini, grated

½ cup yellow squash, grated

½ cup red pepper (small pieces)

 

Prepare the vegetables and set aside.

 

4 cups water

2 cups couscous (whole wheat, if possible)

½ tsp nutmeg

1½ tsp cumin

¼ tsp cinnamon

¼ tsp turmeric

Bragg Amino Acids to taste (opt)

 

Bring water to a boil, add couscous and boil for one minute, stirring constantly. Remove from heat; add prepared vegetables, nutmeg, cinnamon, cumin turmeric and Aminos. Cover and allow to rest for 10 – 15 minutes.

 


Except for the time it takes to prepare the vegetables this is a quick and easy dish. You will be surprised how satisfying this is.
