2 cups medium grind cornmeal
1 cup whole wheat flour
6 tablespoons millet
½ teaspoon salt
1 tablespoon baking powder
½ cup applesauce
6 tablespoons honey
1 teaspoon rice vinegar
1 ½ cups rice milk or other plant milk

Preheat oven to 350 degrees.

Place the dry ingredients – cornmeal, flour, millet, salt, baking powder – in a bowl and whisk to combine.

Place the wet ingredients – applesauce, honey, rice vinegar, plant milk – in a blender and blend until smooth. Pour into the dry ingredients and mix well with a wire whisk for about 2 minutes.

Pour the batter into a 9 x 9 inch non stick baking pan and bake for 45 minutes or until a toothpick inserted in the center comes out clean. Cool and cut into squares.
