Savory Vegetable Soup

2 sweet onions (one blended, one chopped)

4 cups broccoli

2 carrots, sliced

1 celery rib, sliced or chopped

1 small potato, diced

 

1 teaspoon curry powder

1/8 teaspoon turmeric

¼ teaspoon coriander

1/8 teaspoon cinnamon

¾ teaspoon garlic powder

¼ teaspoon black pepper

1 teaspoon Celtic salt

½ teaspoon dried, minced onions

½ teaspoon mustard seeds

4 ½ cups vegetable broth

 

Cut one onion into pieces and blend with ½ cup water. Pour this into a soup pot and add all the other ingredients. Bring to a boil, reduce heat and simmer for 20 – 30 minutes. If desired, blend all or part of the soup with an immersion hand blender.

 

Cooked rice and/or a cooked soup bean blend can be added.
