Maryann’s Famous Lentil Stew

1 onion, sliced or diced

1 – 2 teaspoons minced garlic

5 oz. fresh spinach

2 cups cooked lentils

1 – 2 tablespoons red wine vinegar

 

In a large nonstick frying pan, soften the onion and garlic in a small amount of water. Add the lentils and cook briefly, add the spinach and cook briefly. Add the red wine vinegar to taste.

 

This is a very tasty meal. Serve it with some crusty brown bread or some rice.

The amount of each ingredient can easily be adapted to suit your tastes. I use green lentils but any lentil would work and some beans may even be good in this recipe. Be creative and enjoy!
