EZPZ Small Potatoes and Vegetables

Carrots, onions, mushrooms, green beans or other vegetables of your choice

 Small potatoes 1 ½ inches in diameter, cut in half or dice a larger potato

 Vegetable broth (low sodium)

 

 Dry sauté or steam the vegetables in a non stick pan using the vegetable broth. The time it takes to soften the potatoes will depend on their size.

 

This is a simple one pan meal that can be made quickly especially if you have leftover baked potatoes in you refrigerator and  you keep some vegetables cut up for quick use. You can be creative with you selection of ingredients and make it different every time.
