FOOD COACH NOTE: I did not mention (in the video) that the casserole needs to be covered while baking. (Use aluminum foil or a baking dish with a lid.) This will keep the casserole moist while baking.
SWEET POTATO CASSEROLE
1 large baking apple, peeled and sliced
2 medium sweet potatoes (or yams), peeled and thinly sliced
1/2 cup applesauce
1/2 cup water
1/2 tsp cinnamon
3 tbsp pure maple syrup or honey for a holiday meal (optional)
Preheat oven to 400 degrees.
Layer the apple and sweet potatoes in a square baking dish. Combine the applesauce, water and cinnamon (and optional maple syrup) and pour over the apples and sweet potatoes. Cover and bake at 400 for 40 minutes or until the potatoes are cooked.
This recipe is one that everyone likes. You don’t have to use the maple syrup but that is what makes it seem like a Thanksgiving or Christmas dish.
