Baked Beans

4 cups cooked beans or 2-3 cans, rinsed

(use pinto, kidney, black, great northern or a combination)

1 cup low sodium vegetable broth

1 6-oz can of tomato paste

2 tablespoons blackstrap molasses

1 ½ cups sweet onion, chopped (opt dry saute)

3 teaspoons minced garlic

4 tablespoons Tamari or soy sauce

1 teaspoon cumin

1 teaspoon dry mustard

  • Pre-heat oven to 350 degrees

  • Place the ingredients in a large baking dish

  • Mix well but gently (don’t mash the beans)

  • Bake, uncovered for 45 – 60 minutes

This recipe is good on its own but it also makes a good burrito, is good on a baked potato, on rice or with whole grain bread. It’s very filling.
