2 cups dry kidney beans, cooked – 5-6 cups (or purchase canned beans)
1 large onion, minced (about 2 cups)
2 tablespoons chopped green or red pepper
3 cups diced tomatoes or 2 cans diced tomatoes (no salt)
2 teaspoon liquid low sodium Tamari sauce
3 teaspoon minced garlic
1 ½ teaspoons chipotle chili powder

Dry sauté the onions and pepper until tender.

Add the tomatoes, Tamari sauce, garlic and chili powder.

Cook for 20 minutes on low heat.

Add the kidney beans cook an additional 10 minutes. Add more chili powder to taste.
