Chili Con Frijoles

2 cups dry kidney beans, cooked – 5-6 cups (or purchase canned beans)

1 large onion, minced (about 2 cups)

2 tablespoons chopped green or red pepper

3 cups diced tomatoes or 2 cans diced tomatoes (no salt)

2 teaspoon liquid low sodium Tamari sauce

3 teaspoon minced garlic

1 ½ teaspoons chipotle chili powder

  • Cook the kidney beans.

  • Dry sauté the onions and pepper until tender.

  • Add the tomatoes, Tamari sauce, garlic and chili powder.

  • Cook for 20 minutes on low heat.

  • Add the kidney beans cook an additional 10 minutes. Add more chili powder to taste.
