Sweet Potato and Black Bean Burgers

1 ½ cups mashed, cooked sweet potatoes

1 ½ cups cooked black beans

1 ¼ cups cooked brown rice

½ cup minced onion

1 teaspoons egg replacer, mixed with 2 tablespoons warm water

½ cup breadcrumbs

1 teaspoon smoked paprika

½ teaspoon salt

Several drops of tabasco sauce (optional)

  • Line a cookie sheet with parchment paper
  • Using a large mixing bowl, mashed the beans
  • Add all ingredients
  • Mix well with clean hands
  • Divide into 10 burgers (about ½ cup each)
  • Bake at 400 degrees for 15-20 minutes until cooked through
