Oil-Free Salad Dressing

I have been using this recipe for years, and I always get compliments when guests are over. I hope you enjoy it as much as I do!


  • 2-3 Tbsp Balsamic Vinegar
  • 1-2 Tbsp Dijon mustard
  • 2 Tbsp Cooked Chickpeas (optional)
  • 1-2 Tbsp Water


  1. Place the ingredients into a container (or a blender, if using beans) and shake to mix.
  2. Enjoy! It tastes great on salads, rice, vegetables, and on almost anything!
